Recipe for the weekend: Coconut Cookies for Passover
On Passover, special food is eaten to remember that the Jews had to leave Egypt so quickly that there wasn’t time for their bread to rise. During the eight days of Passover, many people do not eat food that contains flour. Check out this great recipe for flourless Passover cookies.

3 cups shredded coconut
4 egg whites
1 cup granulated sugar
2 tbs cornflour
Dash of salt

In small bowl with mixer at high speed, beat egg whites and dash of salt until soft peaks form.
Gradually add in sugar while mixing until peaks are stiff and glossy.
Fold in coconut and cornflour.
Drop the batter from a teaspoon onto the prepared cookie sheets.
Bake at 325*F 18-20 minutes until set and very slightly browned.
Center will still be soft.
