Recipe for the weekend: Cheese Blintzes
The Jewish holiday of Shavuot that marks the giving of the Torah to the Jews will be celebrated next week. According to the Jewish tradition, on Shavuot we should eat dairy foods. Cheese Blintzes is one of Shavout typical delights.

Ingredients for the crepes:
3 eggs
1/2 teaspoon salt
1 cup water 
1 cup milk 
3 tablespoons oil 
1 1/2 cups flour 

Ingredients for the filling:
1lb. cream cheese (you can use law fat creem cheese)
1/4 cup sugar 
Lemon zest from 1/2 lemon 
1 tablespoon cornstarch
1/2 teaspoon vanilla extrac

3/4 cup raisins

To prepare the crepes, mix in all crepe ingredients in a small bowl and let stand for 15 minutes.

Heat a lightly greased 8-in. nonstick skillet. pour 2 tablespoons batter into the center of skillet. Lift and tilt pan to evenly coat bottom. Cook until top appears dry. turn and cook 15-20 seconds longer. Remove to a plate. Repeat with remaining batter.

Mix all filling ingredients in a bowl untill mixture is smooth.
Spread about 1 rounded tablespoonful onto each crepe. Fold opposite sides of crepe over filling, forming a little bundle. Place seam side down in a greased  baking pan. Bake, uncovered, at 350° for 10 minutes or until heated through.

Serve warm with a drizzle of honey or spread powdered sugar on top.
